Note: My friend, Donna, a preschool director made this recipe with her class. It was a hit!

Pumpkin Cream Pie

2 c. milk
2 (4 oz.) packages instant vanilla pudding mix
1 c. cooked pumpkin
1 c. whipped topping
1 tsp. pumpkin pie spice
Cooked pie crust or individual graham cracker tart crusts

Directions: Mix all ingredients well (the actual recipe says to use mixer for a minute, I think, but I let the kids all have a turn stirring. It didn't look as nice, but the kids didn't notice!). Spoon into cooked pie crust. (We used the graham cracker tart crusts so everyone could have their own pie.) Chill 3 hours. (We chilled ours for about an hour and it was fine...a regular pie crust would be firmer with three hours, though). It was delicious and fun to make. A real hit with the kids.
